Sabias que hacer Chamoy en casa es muy fácil? Hazlo para tu próximo convivo este verano usando Jamaica fresca y Chipotles en Adobo de La Costeña @_mexicorico 🌶️🌺 Ingredientes: • 1 1/2 Taza de Flor de Jamaica previamente lavada •2 Tazas de agua • 2 Chiles chipotle en adobo de La Costeña @_mexicorico • 1/ 2 cucharadita de sal o al gusto • 1 cucharadita de chile en polvo • 1 limón chico • 3/4 taza de azúcar granulada o al gusto Empezamos poniendo la flor de Jamaica seca en una ollita junto con el agua. Se tapa para que la Jamaica quede más suavecita y se hierve por 15 minutos a fuego mediano. Luego apagar la flama y deja enfriar. Una vez que esté tibia la Jamaica, se pasa por un colador y se reserva el líquido de la Jamaica. De ahí ponemos en el vaso de la licuadora la flor de Jamaica y se agrega los chiles chipotle de La Costeña @_mexicorico , el azúcar, chile en polvo de su preferencia, sal y agua de la cocción reservada de la Jamaica, solo la suficiente para que quede una salsa de Chamoy espesa. Se licúa hasta que queden todos los ingredientes bien licuados y ponemos la mezcla al fuego mediano bajo en la misma olla que se coció la Jamaica. Se agrega el jugo de limón y ajustamos ñ de sal y azúcar. Revolvemos constantemente por cinco minutos y se apaga y retira de la estufa. Una vez que esté fría la salsa de Chamoy con chipotle la pueden usar para escarchar vasos, ponerla encima de fruta picada o en una rica mangonada! Serrano Cornbread Ingredients: • 1 cup cornmeal • 1 cup all-purpose flour • 1 tbsp baking powder • 1/2 tsp baking soda • 1/2 tsp salt • 2 tbsp sugar or honey (optional) • 2 eggs • 1 cup milk + 1 tbsp vinegar • 1/4 cup melted butter or oil • @_mexicorico Serrano peppers, finely diced (use more or less depending on heat level you want) • About 1 cup of shredded pepper jack cheese 🔥 Directions: 1. Preheat oven to 375°F. 2. In a large bowl, combine the cornmeal, flour, baking powder, baking soda, salt, and sugar. Then in another bowl, whisk together the eggs, milk, vinegar, and melted butter. Once both are combined, mix the wet ingredients into the dry ingredient bowl. 3. Gently fold in the Serranos and cheese. Then pour it into a greased pan. Bake for 20–25 minutes, until the top is golden. You don’t need a special occasion to whip up a batch - our families can’t get enough of it. 🌶️🧀 Laced deliciously with sharp cheddar and chopped pickled jalapeños from @_mexicorico this cornbread has incredible texture from the cornmeal, is perfectly salty and nutty from the cheese, and has just the right amount of kick from those jalapeños. The flavor combination is absolutely perfect! Amazing with just butter and honey, but it’s the ULTIMATE side for chili or pulled pork. RECIPE: 1½ cups flour ½ cup cornmeal 3 tsp baking powder 1 tsp salt 1 egg 1 cup milk 4 oz melted butter 2 tbsp honey 4 oz sharp cheddar, shredded ¼ cup green onions, chopped (optional) 3 (or more!) pickled jalapeños from La Costeña Mix dry ingredients, whisk wet separately, combine gently.
