🍝🔥 Creamy Chipotle Bacon Fettuccine featuring La Costeña @_mexicorico Chipotles en Adobo Ingredients for 4 servings: • 3 strips bacon, chopped • 2 thin slices red onion • 1 large garlic clove • 2 tsp olive oil • 2 tbsp La Costeña @_mexicorico chipotle peppers, finely chopped • 2 cups heavy cream • 1/2 tsp freshly ground black pepper • 1/4 cup grated Parmesan cheese • Salt (only if needed — bacon, pasta, and Parmesan already add salt) **For the pasta:** • Big handful of fettuccine or tagliatelle • 8–10 cups filtered water • enough salt for the pasta water Bring water to a boil over medium-high heat (about 15 min). Add pasta and salt, stir for 1 min to prevent sticking, and cook for 6–8 min until al dente. While the pasta cooks, make the sauce: In a preheated skillet over medium heat, add chopped bacon, red onion, and garlic. Cook about 4 min. If there’s too much bacon fat, remove half with a paper towel. Add olive oil, stir, then pour in heavy cream. Stir quickly for 2 min. Add La Costeña @_mexicorico chipotle peppers and black pepper. Mix for 1 min, let it simmer for 2 more min on slightly lower heat so it thickens. Add Parmesan, stir, then add the drained pasta. Toss gently to coat everything in that creamy, smoky chipotle sauce. 🌶️ Spicy Bloody Mary with La Costeña Jalapeños & Turkey Bacon Garnish Ingredients: • 1 lime (juice) • 1 lemon (juice) • 1 ½ cups spicy tomato juice • 1 tbsp La Costeña canned jalapeños, finely chopped (add more if you like it hotter) • 1 tsp hot sauce • Salt and freshly ground pepper, to taste • Tajin, salt and black pepper (for glass rim) • Ice cubes Garnish: • 2 slices of cooked turkey bacon, skewered • Cherry tomatoes, skewered • Whole jalapeño and carrot (optional, slit for aroma, or grilled slightly) ⸻ Instructions: 1. Prepare the glass: • Run a lemon or lime wedge around the rim of a tall glass. • Dip the rim in a mix of Tajin and pepper. 2. 🌶🔥 Spicy Salsa with Fried Chiles de Árbol & Tomatillos from La Costeña @_mexicorico Ingredients for about 2 cups of salsa: • 4-6 tomatillos from La Costeña @_mexicorico and a splash of the water from the can •1/4 cup toasted árbol chiles •1/4 white onion • 2 garlic cloves • 1 small bunch fresh cilantro • Salt to taste • 1 1/4 cups vegetable oil In a preheated pot or pan, heat the oil. Once hot, fry the corn tortilla chips until crispy. Set aside on a paper towel. In the same oil, fry the chiles, onion, and garlic just until they change color (about 3 minutes for the chiles). Turn off the heat and let cool slightly. In a blender, add the tomatillos (with a bit of their liquid), fried chiles, onion, garlic, cilantro, and salt. Blend until smooth and creamy. Ready! These are not your abuelita’s Brussels sprouts. 🤩 Hot Honey-Chipotle Brussels Sprouts with Crispy Bacon Bits using @_mexicorico La Costeña Diced Chipotle Peppers 🌶️ Perfect side dish for a spicy summer twist! ☀️ Ingredients for 3-5 servings: •1.5 lb Brussels sprouts, trimmed and halved •3 strips bacon, crumbled •2 tbsp La Costeña chipotle peppers in adobo, diced •2 tbsp olive oil •2 tbsp honey •Salt + black pepper to taste Preheat oven to 400F. Place a lightly oiled baking sheet while it preheats. Chicken-Potato Pasta Salad with La Costeña @_mexicorico Jalapeños & Carrots 🌶️ 🥕 Ingredients for 8-10 servings: •4 medium chicken breasts (or 2 rotisserie chickens) •1/2 white onion •2 peeled garlic cloves •1 tsp salt •10 cups filtered water (for chicken) •4 cups of elbow pasta •About 10 cups of water (for pasta) •1 1/4 cups of La Costeña pickled jalapeños with carrots + a bit of their vinegar brine •2 cups of mayo •3 cups of Mexican crema or sour cream •1 cup of fresh carrots (diced) •2 cups of fresh potatoes (diced) •6 cups of water (for veggies) •Salt & pepper to taste •Tostadas or salted crackers for serving Boil the chicken breasts with onion, garlic, water, and salt. Cover and cook over medium heat for about 40 minutes. Once cooked, set the chicken aside to cool, then shred. (Tip: You can cook and shred the chicken a day before and keep it in the fridge or go to your local grocery store and buy 2 rotisserie chickens and shred the breasts.) Boil 10 cups of water, add salt, then add the pasta. Stir for a few seconds and cook over medium heat for 5–7 minutes until al dente. Peel and dice potatoes and carrots, then boil them in 6 cups of water for 5–8 minutes until tender but not mushy. Drain and let cool. In a big bowl, mix the cooked pasta and shredded chicken. In another bowl, mix the mayo, crema, salt, and pepper, then incorporate into the pasta and chicken. Mix carefully to avoid breaking the pasta. Add in the veggies and La Costeña jalapeños with carrots and a bit of their brine. Mix gently, taste, and adjust salt, pepper, or jalapeños as needed. Cover and chill for at least 4 hours. Serve super cold with tostadas or crackers! Muy rico! 🤩 Pro Tip: To keep it fresh during your party, place the salad bowl over a larger bowl filled with ice. Chicken-Potato Pasta Salad with La Costeña @_mexicorico Jalapeños & Carrots 🌶️ 🥕 Ingredients for 8-10 servings: •4 medium chicken breasts (or 2 rotisserie chickens) •1/2 white onion •2 peeled garlic cloves •1 tsp salt •10 cups filtered water (for chicken) •4 cups of elbow pasta •About 10 cups of water (for pasta) •1 1/4 cups of La Costeña pickled jalapeños with carrots + a bit of their vinegar brine •2 cups of mayo •3 cups of Mexican crema or sour cream •1 cup of fresh carrots (diced) •2 cups of fresh potatoes (diced) •6 cups of water (for veggies) •Salt & pepper to taste •Tostadas or salted crackers for serving Boil the chicken breasts with onion, garlic, water, and salt. Cover and cook over medium heat for about 40 minutes. Once cooked, set the chicken aside to cool, then shred. (Tip: You can cook and shred the chicken a day before and keep it in the fridge or go to your local grocery store and buy 2 rotisserie chickens and shred the breasts.) Boil 10 cups of water, add salt, then add the pasta. Stir for a few seconds and cook over medium heat for 5–7 minutes until al dente. Peel and dice potatoes and carrots, then boil them in 6 cups of water for 5–8 minutes until tender but not mushy. Drain and let cool. In a big bowl, mix the cooked pasta and shredded chicken. In another bowl, mix the mayo, crema, salt, and pepper, then incorporate into the pasta and chicken. Mix carefully to avoid breaking the pasta. Add in the veggies and La Costeña jalapeños with carrots and a bit of their brine. Mix gently, taste, and adjust salt, pepper, or jalapeños as needed. Cover and chill for at least 4 hours.  Ingredientes para 3 tazas de salsa cremosa y picosita •8 tomatillos medianos, pelados y lavados •4 chiles serranos en vinagre La Costeña •1 cda del vinagre de los chiles •1/2 aguacate maduro, pelado •1 diente de ajo (opcional) •1 puño de cilantro fresco, lavado •Jugo de 1 limón verde •1 taza de agua fría (o la necesaria) •Sal al gusto En el vaso de la licuadora agrega el cilantro, tomatillos, ajo, jugo de limón, chiles serranos, el vinagre de los chiles, agua fría (solo la necesaria para lograr una textura cremosa), y sal al gusto. El debut de la voz de Adri Mamá con nada más ni nada menos que nuestras Tortillas de Jalapeños en Vinagre de La Costeña @_mexicorico 🇲🇽🔥 Ingredientes para 2 docenas: •4 tazas de harina de maíz •1/2 taza de harina de todo uso •4 cucharadas de jalapeños y zanahorias en vinagre La Costeña @_mexicorico (finamente picados) •3 tazas de agua tibia (o la necesaria para que la masa no se pegue) Utensilios: •Máquina manual para tortillas •Bolsa plástica •Comal o sartén •Palita •Tortillero o plato •Bowl grande En un bowl grande mezcla la harina de maíz y la harina de todo uso. Haz un huequito al centro, agrega los jalapeños y zanahorias picados y 2 tazas de agua. Revuelve y agrega agua poco a poco hasta tener una masa suave que no se pegue. Forma una bola, tapa y deja reposar 10 min. Prepara el comal y la máquina con plástico. Haz bolitas (puedes usar una cuchara de nieve para que queden iguales). Pon la bolita entre el plástico y presiona despacio en la máquina, que no queden no muy delgadas. Cocina en el comal 1-2 min hasta que cambien a un color amarillo clarito. Cook for 5 minutes over medium heat, then start breaking up the meat and cook another 5 minutes.
